Giaka is short for Giakanja, and this coffee comes from the Giakanja Farmers Co-operative Society, which consists of the Giaka factory’s approximately 1,467 members. ("Factory" is the local term for a community washing station or wet mill.) Members selectively handpick their cherry and deliver it to the wet mill the same day. Before pulping, all red, ripe cherry is separated from under-ripes, over-ripes and foreign matter. The coffee is then washed with clean river water that its later recirculated before it is disposed of in seepage pits. The coffee is later dried on raised tables before it’s delivered to the dry mill for secondary processing, which includes size sorting. Nyeri County boasts beautiful, red volcanic soil, and approximately 194 hectares (480 acres) of the county are dedicated to coffee production.
