Finca La Riviera Pink Bourbon Washed Coffee

Julio Cesar Madrid Tisnes is a third-generation coffee grower, and Finca La Riviera, a 38-hectare farm, joined the ranks in his showcase of outstanding estates in 2013. Together with two other farms, Finca Milan and Finca Buenos Aires, the Tisnes family’s estates have won multiple awards and championships around the world, including national and world barista championships.

Located in the central foothills of the Andes Mountains within the Risaralda Department, Finca La Riviera’s young soil is enriched with nutrients from the relatively recent eruptions of nearby volcanoes. The wide thermal range of the microclimate reaches up to 30ºC in the daytime and can drop to 15ºC in the evening, allowing coffee cherries to develop complex and unique flavors.

For Finca La Riviera, Julio has had his sights set on innovation from the beginning. Many non-traditional varieties are grown here, including Gesha, Laurina, Sudan Rume, and a myriad of niche Bourbon strains like Sidra and Rayado.

What is Pink Bourbon Coffee?

The Pink Bourbon coffee variety has been making waves for its extremely sweet and complex cup character, as well as the striking pink color of its cherries. A natural cross between Red and Yellow Bourbon, selecting and developing Pink Bourbon was a painstaking process to draw out the recessive genetics responsible for the coffee’s pink color and other characteristics.

Washed Process Coffee in Colombia

In the “washed” or “wet” process coffee cherries are floated and sorted to ensure consistent ripeness and to remove any defective cherries. At Finca La Riviera, cherries are pulped on the same day they’re harvested and left to oxidize in tanks for 20 hours. Afterward, the beans are washed and sun-dried for 20-25 days.

Washed processing has become widely popular but, as its name suggests, can be highly water-intensive. The cup profile of washed coffees tends to reflect the terroir of the coffee. The processing method allows the growing conditions, the region, and the true character of the coffee to shine through.
